Healthy and Hydrated with a Raspberry Float

Nothing says summer like a head cold, right?  No?  You’re right, I think there is nothing worse than being sick during the summer.  All that beautiful weather and you want nothing more than to go back to bed.  With my three boys, I can’t afford to get sick.  There’s enough chaos in my life without adding illness to it.  I’ve got to stay healthy and hydrated to keep up with my family!

For the past year, every time my boys started sniffling or Mr Napping complained of a sore throat, I reached for my secret stash of Emergen-C.  I was only sick three times this past year, which is a big deal since it was our first year with a kiddo in public school (and public school germs!).  Big J seemed like he was always sick, especially this past winter, the poor kid.

When Little J started sniffling and coughing last week and Big J woke up two days before school got out with a cough, I started hitting the Vitamin C as a preventative measure.  We’ve got a busy summer ahead and I definitely don’t intent to start it with a head cold!  While I enjoy the Raspberry Emergen-C mixed as directed on the box, in honor of summer, I decided to try it as a float.  It was a pretty delectable way to get my vitamins in.

STAY HEALTHY AND HYDRATED
RASPBERRY VANILLA FLOAT

Emergen-C Hydrated and Healthy Raspberry Vanilla Float Pin

Raspberry Vanilla Float

Prep time:  5 mins

Total time:  5 mins

Serves: 1

A delectable treat that is packed with vitamins, electrolytes and antioxidants!
Ingredients
  • 1 packet Emergen-C Raspberry flavor
  • 4-6 ounces of water
  • Vanilla ice cream
  • Chocolate syrup (optional)
  • Fresh fruit (optional)
Instructions
  1. In a small cup, mix the water and packet of Emergen-C together and stir until combined.
  2. In a larger cup (approximately 10-12 oz), place about ½ cup of vanilla ice cream in the bottom.
  3. Slowly pour the Emergen-C over the ice cream. Drizzle chocolate syrup over the ice cream if desired. Garnish with fresh fruit, if desired.
  4. Enjoy!
Notes
As stated on the box, you can use 4 oz of water for a stronger flavor or 6 oz of water for a less powerful flavor. I prefer it with the 4 oz. Adjust it to your preferences.

This was a super fun way to get my vitamins in, perfect for the hot weather here in the desert.  Want a little extra treat, drizzle the top with chocolate.  Because who doesn’t like chocolate raspberries?  I love that not only does this taste great and have the super boost of Vitamin C, it’s got other vitamins and minerals too.  The electrolytes are awesome post-workout to help re-hydrate you and the ice cream will help you cool down.  Emergen-C encourages me to drink more, which is always a good thing!  The 7 B Vitamins also help enhance energy naturally, which is always a plus for me.  With my little whirlwind kiddos, I need all the energy I can get!

You can find Emergen-C at Walgreens; and, during the month of June, you can get a 30-count Emergen-C pack and a FREE 1-liter bottle of Dasani water.  I found my pack of Emergen-C in the health department, near the other vitamins.  The water was just down the aisle in the cooler – cold and ready to drink!

Raspberry Chocolate Chip Brownies

Do you have backyard BBQ’s on your calendar for this summer?  I plan to host a few and I’m sure we’ll end up attending a few more too.  BBQ’s are one of my favorites about summer time.  The company, the weather, the food… it’s perfection.  Some times, though, I just don’t want to spend a whole lot of time on putting the menu together.  I want to be able to enjoy the company and not spend my time running around the kitchen.  That’s when I reach into the baking methods my momma taught me.  I put out my favorite package of brownie mix or cake mix and whip up a tasty treat.  That’s right, packaged mixes.

I love the simplicity that baking with a mix offers.  Recently, I was introduced to Better World Brownies, an organic brownie mix, through Globe In, a monthly subscription box of artisan-made products from around the world.  I’ll give you a tour of my whole Globe In box next week.  That said, this post is in no way sponsored and, as always, all content is mine – honest and original.  I made some Raspberry Chocolate Chip Brownies with the Better World Brownies.  They turned out delish!

RASPBERRY CHOCOLATE CHIP BROWNIES

Raspberry Chocolate Chip Brownies from a Brownie Mix

Raspberry Chocolate Chip Brownies

Prep time:  10 mins

Cook time:  35 mins

Total time:  45 mins

Serves: 9-12 servings

A decadent chocolate dessert made from your favorite brownie mix. Simple and delicious!
Ingredients
  • 1 package of your favorite brownie mix. You can find the Better World Brownies here, if you're interested in trying them. But any brownie mix will work just fine.
  • Applesauce.
  • Chocolate chips
  • Oil or butter, as called for on the brownie package
  • Eggs, as called for on the brownie package
  • Raspberries
  • Chocolate sauce (optional)
  • Whipped cream (optional)
Instructions
  1. Mis the brownies according to the directions on the back of the package, with one exception. Substitute half the oil with applesauce. Use the eggs and the other half of the oil the package calls for.
  2. If you want an extra rich brownie, stir 1 cup of chocolate chips into the batter and mix well.
  3. Pour batter into a baking pan. Scatter chocolate chips on top of the brownies. and bake according to the package directions.
  4. Let the brownies cool and cut into pieces.
  5. Raspberry Chocolate Chip Brownies
  6. Place each brownie on a plate and top with whipped cream, if desired.
  7. Drizzle chocolate sauce over the brownie, if desired.
  8. Garnish with fresh raspberries.

Summer is the perfect time for garnishing your favorite chocolate desserts with fresh fruit.  And, by substituting half the oil for applesauce, you’re cutting some of the fat in the recipe, but it also helps keep the brownies nice and soft.  If you sub out more than half the oil, the texture changes and you get a really dense brownie.  If that’s okay with you, go for it.  These Raspberry Chocolate Chip Brownies are perfect for your next get together.  Super easy to make and they taste fabulous!

Oregano Jalapeño Bacon Salsa

With Summer coming on fast here in the desert, I’m starting to bring out my no-cook and low-cook recipes.  Especially as after school snacks – no more cookies that heat the oven to 350F (who am I kidding, I didn’t do that anyway)!  I try to provide my family with snacks that will fill them up until dinner time, not just hype them up until they drive me crazy.  Sugary sweets are not what my kids need for their afternoon snack.

Salsa is a favorite around here.  I love that the ingredients are mostly veggies and herbs, with a few spices (and the occasional bit of bacon grease… hey, no one’s perfect).  This recipe puts a little Italian twist on salsa, not your typical flavor.  What I love about this is that you can put this over chicken breasts with a side of pasta and it’s a delicious meal or you can dip crackers in it and it makes a great snack.  It’s win-win in all situations!  It’s a yummy and unique flavor, perfect for all those backyard BBQ’s you have coming up.

OREGANO JALAPENO BACON SALSA

Hunts Fresh Twists Oregano Jalapeño Bacon Salsa

Oregano Jalapeño Bacon Salsa

Prep time:  10 mins

Cook time:  15 mins

Total time:  25 mins

Serves: Serves 6

A salsa recipe that tops chicken breasts or crackers with a unique Italian-twist.
Ingredients
  • 2 14.5oz cans Hunt's diced tomatoes (I used the garlic, basil and oregano tomatoes. If you want more of a Mexican-flavor salsa, just use the regular diced tomatoes for more authentic flavor.)
  • 2 Tbsp lime juice
  • ¼ tsp cumin
  • 6-8 cloves garlic, minced
  • ½ purple onion, diced
  • 1 jalapeño, seeds removed and diced
  • 3-4 slices of bacon, crumbled or ¼ cup bacon bits

Instructions
  1. Saute the diced onion, minced garlic and diced jalapeño pepper on medium heat on the stove. I like to saute them in a little bacon grease for added flavor, but butter or oil will work too. This also helps tame the pepper. Saute until onions begin to caramelize and the peppers are soft. I like to caramelize the onions a bit, but you don't have to.
  2. Hunts Fresh Twists Salsa Saute Peppers, Onions and Garlic
  3. Add the lime juice and cumin. Simmer two minutes on low-medium heat.
  4. Add the diced tomatoes and simmer 5 minutes. (I like to add a tablespoon of sugar now to tone down the acidity of the tomatoes.)

  6. Pour the salsa into a heat-safe, freezer-safe container. Refrigerate 4-6 hours. (Or put it in the freezer for about 45 mins to an hour, stirring every 20 minutes or so and then transfer to the fridge).
  7. Garnish with bacon crumbles or bacon bits. Or mix it into the salsa for more of a uniform taste.

  9. Serve with chips on over chicken breasts. The tomatoes with garlic, basil and oregano are yummy with whole grain crackers and super delicious over chicken. The regular diced tomatoes are great with tortilla chips.

The jalapeño in this salsa isn’t really hot.  My weak-palate family loves this recipe, even my mom likes it… and that is saying something.  If you want more kick to your salsa, don’t saute the pepper as long or use as much grease.

If you want a more authentic salsa flavor, use the regular Hunt’s diced tomatoes that aren’t already seasoned.  It makes a yummy salsa with a more traditional flavor that pairs well with tortilla chips and makes a great party dip.

I love that I can grab all these ingredients at Wal-Mart on one of my main routine trips out for other necessities.  I don’t have to make a special trip to the store and I can grab everything I need for a yummy snack, a delicious appetizer or dinner.

{Almost} DIY Spaghetti Sauce

So… how’s your week been?  Things have been a bit crazy around here lately and dinner has been less than planned in advance.  And the one night it was planned in advance, it didn’t happen.  We have been working like crazy to get our backyard landscaped (and our washing machine fixed!) and it’s been a lot of long, tiring days.  Definitely not the kind of day you want to spend an hour making dinner afterward.  And that’s where this Almost-DIY Spaghetti Sauce came into play.

It was 6:30pm, we had been working in the yard and the sun all day, sore back, tired feet and dirty.  And I was out of spaghetti sauce.  Great.  I had a couple cans of tomato sauce though so I was able to whip some things together and save dinner from being buttered spaghetti noodles.

ALMOST-DIY SPAGHETTI SAUCE

Almost DIY Spaghetti Sauce

Almost-DIY Spaghetti Sauce

Prep time:  5 mins

Cook time:  15 mins

Total time:  20 mins

Serves: 6-8 servings

Out of spaghetti sauce and dinner should've been ready an hour ago? Take these few ingredients from your kitchen and save dinner with a delicious sauce.
Ingredients
  • 2 eight-ounce cans of tomato sauce
  • 1 lb ground beef
  • ½ large yellow onion
  • ½ Tbsp garlic salt
  • 1 tsp white granulated sugar
  • 3 Tbsp powdered Parmesan cheese
  • 2 tsp dried oregano
  • 1 tsp dried basil
  • Shredded Mozzarella Cheese for garnish
Instructions
  1. Brown the ground beef on the stove in a large saucepan over medium-high heat.
  2. Chop the onion and saute in the pan with the beef.
  3. Add the tomato sauce and mix until well combined.

  5. Add the garlic salt, sugar, oregano and basil. Mix well.

  7. Stir in the Parmesan cheese.
  8. Cover and let the sauce simmer on the stove for 5-10 minutes. Turn off heat.
  9. Let stand for 3 minutes before serving to allow sauce to thicken.
  10. Serve atop pasta and garnish with mozzarella cheese.

Fresh Fruit Pudding Flower Garden Snack Packs – Single-Serve, Easy Dessert

We spent last weekend working on our backyard landscaping project… FINALLY!  We’ve lived in this house for almost three years now and about half of our backyard has been very limited in it’s usability.  But this year, we’re changing that!  As part of our landscaping, we’ve been talking about flowerbeds and gardens.  My boys “helped” me plant our garden last year and they keep asking if they can help with the garden this year.  We just aren’t quite to the planting stage yet; while Daddy worked in the backyard, we made our own little pudding flower gardens with Snack Packs!  YUM!

I grabbed a Snack Pack with new easy-open lids at Wal-mart and saw these new SUPER snack packs… super is right!  I showed them to Mr Napping.  He said, and I quote, “whoa, mon-delicious!”  How could I pass up the ‘daddy size’ pudding?  They jumped in our cart as well as a traditional sized pack.  The SUPER Snack Packs were in both chocolate and vanilla flavors, but it was hardly even a choice… because, well, chocolate.

One of my most favorite things about spring and summer is the abundance of produce.  My family loves fresh fruit.  And I figured some fresh fruit would help make our easy desserts a little more healthy.  So, after we had our snack packs, we headed up to the produce and picked up some of our favorites.  Once we got home, the real fun began.

MATERIALS:
– Green apple
– Pineapple
– Mango
– Raspberry
– Kiwi
– Green Grapes
– Cantaloupe
– Strawberries
– Oranges
– Banana
– Any other fruit you want
– Chocolate crackers (I used chocolate graham crackers)
– Cutting Board
– Sharp Knife
– Fruit Corer
– Flower/garden shaped cookie cutters
– Wooden Skewers (optional)
– Kitchen Shears (optional, but helpful)

Directions:
– Wash all the fruit, grab a seat and pull the trash can over.  You’re about to peel, slice, core and cut up a bunch of fruit.
– Cut up the fruit.  I basically took all the big fruit (pineapple, cantaloupe, mangos, apples) and made as large of a slice as I could.  I cut the friut into 1/4-1/2 inch thick rounds, as best I could.  I used my flower cookie cutter, and an egg and a heart cookie cutter to cut out flower heads.  Flip the hearts upside-down and they kind of look like bulbs about to bloom.  I cut the egg shapes to look similar to tulips.  I trimmed the stem off the flower cutter and just used the head.  For the thicker fruit, like the cantaloupe, I cut the flower heads in half length-wise and made two heads from one cookie cutter cut.

I used the smaller fruits as embellishments or cut embellishments out of them, either by hand with my knife or with my corer.  That thing was a lifesaver.  It was super easy to cut flower centers with it.  It also made for some cute small circles to create petals on smaller flowers.

– Put the chocolate cracker in a zip top bag and smash it into crumbs.  You will probably only need one  cracker (or even half), unless you are doing a whole bunch of pudding cups.
– Set the fruit flower heads in the pudding cup.
– Add any extra embellishments (an apple center, for instance).  I used a small dab of pudding on the back of the apple to get it to stick to the pineapple flower head.

– Sprinkle crushed chocolate cracker crumbs around the flower.  You can put these in right after you open the pudding cup and before the flower head goes in.  After doing a couple experiments, we decided that the crumbs made the pudding cup look neater, but it we liked the taste better without them.  By just sprinkling the crumbs around the flower, you put in fewer.  It still looks good, but it’s super easy to eat the crumbs off the top and then enjoy the smooth, creamy pudding just as it is.  Experiment and let me know if you like it better with the cracker crumbs or without.
– Refrigerate until ready to serve.

My very most favorite part of these pudding flower garden desserts is that they are individual single-servings.  If you’ve ever seen a yogurt or pudding cup after a toddler has eaten out of it, you know it’s not really something you want to share.  AND you just toss out the dish.  My very most favorite kind of clean up!

These pudding flower gardens are delicious, easy and the fresh fruit is a great way to liven up dessert without a whole bunch of extra refined sugar.  The pudding even serves as a fun dip for the fruit.  The SUPER Snack Packs are perfect for adults and don’t leave you wanting more, like I often find with a traditional Snack Pack.  I also liked the texture of them better than a traditional Snack Pack, they were more creamy and not as gelatinous as the smaller Snack Pack.  They even have the same amount of calcium as an 8 ounce glass of milk, so eat up.  You’re just trying to do your part in avoiding osteoporosis (weak bones), right?  Just lift the baby a few more times or chase the toddler across the park an extra hundred yards to work off the extra calories.  Despite their little legs, they can somehow run the length of a football field when being chased by mommy.  But it’s totally worth it… I’ve think I’ve found a new “Mommy Snack”.
