Post It Note Goal Tracker

I ran into this idea over at Cornflower Blue Studio and knew it was the perfect organizer for me.  Visually appealing, easy to change and update, and personalizable!  If you’ve been around here much, you know I love one-of-a-kind and unique.  And I was always the child who doodled, so this was PERFECT!

POST IT NOTE GOAL TRACKER


Materials:
– Poster board
– Sharpies or other markers
– Post-It Notes
– Ruler
– Pencil
– Scissors
Directions:
–  Measure 11×14″ out of your poster board with your ruler and pencil (or buy it that size – usually you can find smaller packs of poster board with the large poster board pieces).  Use the scissors to cut it out.  Set aside the extra board.
–  Measure out six squares (or however many you want).  Post Its are 3 inches by 3 inches if you use the standard size.  I actually bought a pack of Post Its with five colors – and five separate pads – so I just moved the pads around until I found a layout I liked.
–  Then I made space for my text.  I opted to make the time frame a post it too, so I can change it as I need.  Sometimes it’s easier to take things a day at a time and sometimes I need a big picture reminder.  
–  I used my pencil to draft my design and then I broke out the permanent markers.  Mine were some off-brand knock offs and were metallic.  They were fun, but I had to make sure they were really dry or they’d smudge.  I just went to town with the markers.
–  While my poster board dried, I cut out a smaller piece of poster board from my extra.  I didn’t do anything to it, and it actually hangs behind the goal tracker.  I put any of the Post Its I might use again on it and then reuse them until the sticky is no longer… sticky.  Just to save a little $$$.  That’s totally optional.
I just free-handed everything but you could use scrapbook embellishments, stickers, die-cuts, or whatever else your little heart desires.  I do have printable versions available for sale in my Etsy shop.  However, you will have to get it printed at Costco or Kinko’s or wherever you prefer because it’s larger than most of us can print at home (11×14″).  After you print it all you will need is some Post It notes.  You could also frame the print and use a dry or wet erase marker on the glass.  Even more budget-friendly than the Post Its.  

I am totally loving this.  It’s pretty and it’s fun to use.  Easy, versatile, personalized and useful!  LOVE IT!

{Printable} Life is Good

These printables come from a quote suggested by Jessie on my Facebook page.  Thanks for the quote Jessie!  I love this quote, it is so true.  Usually.  We had a great day yesterday!  The boys and I did a photo shoot.  I wanted some 1 year pictures of Gator {I’ll post a few in a few days} and they turned out waay too cute.  We also spent the afternoon out riding the ATV’s.  One of the many perks of living down the street from BLM land!  =)  I love my family.  Life, most definitely, is good.

Mango Salsa

We are always up for a good Mexi-American dish, so when we had some friends over a few weeks ago, and planned tacos for dinner, we were all over some fresh Mango Salsa (and Pico de Gallo, but I forgot to take photos of that, dang it).  We have made mango salsa on a few occasions before; but this was, by far, the best so far.

MANGO SALSA

Ingredients:
– 2 large, ripe mangoes
– 1/2 large, purple onion
– 1 medium bunch of cilantro
– 1 large, red bell pepper
– 1 large, orange bell pepper
– 1 large, green bell pepper
– Juice from 1/2 of a medium lime (or approx 2-3 Tbsp lime juice)
– 1 tsp garlic powder

Directions:
– Peel and dice the mangoes.  Put them into a large bowl.
– Chop the onion.  Add to the bowl.  You can add more or less to taste and depending on the potency of your onion.
– Chop the cilantro and add it to the bowl.
– Seed and chop the bell peppers.  Dice and add them to the bowl as well.
– Cut the lime into wedges and squeeze 1/2 of the lime wedges over the salsa.
– Stir the salsa until well mixed.
– Sprinkle the garlic powder over the salsa and mix well.

Chill and serve.
Serves 4-6.

You can always adjust the amounts of the ingredients to taste.  Serve with tortilla chips, in tacos or with a spoon… the latter is my favorite way to eat it!  =)  Enjoy!

Cream Cheese Won Tons

I know, I posted a recipe yesterday… but they are faster and easier to write up than craft projects.  And Mr Gator had his 12 month well baby check yesterday (he got five shots, poor guy!) and was pretty stuck to my hip.  Ever tried to type with a one-year-old on your lap…?  It’s kinda like wrestling a snake… (on a side note:  12 months?  Where did the time go!?  I can’t believe my baby isn’t a baby anymore!)

Anyway, who doesn’t love some good Chinese treats, right?  Chinese New Year just passed; and, as usual, I’m a day late and a dollar short… but these are still delicious, even if you eat them a day (or two – or two hundred) late.  So… on to the good stuff!

CREAM CHEESE WON TONS


Ingredients:
– 1 16oz package Cream Cheese
– Won ton Wrappers (Mr Napping found them in the refrigerated section of the grocery store – like with the cheese.  It was like $3 for 50 of them or something.  We didn’t use them all.)
– Green Onions (optional and as desired)
– Oil to fry your won tons in (we used the Crisco knock-off)
– Small bowl of water to seal the won ton wrappers with

Directions:
– Pull out your cream cheese and let it soften.
– Chop up the green onions (you could also add some crab or Krab.  That’s on our to-do list the next time we do this)
– Place your softened cream cheese into a medium mixing bowl.  Mix the green onions into the cream cheese.
– Lay out your won ton wrappers and spoon the cheese-onion mix onto the wrapper.
– Dip your finger in the water and wet the edges of the wrapper, pressing the sides together to seal them.  We actually sealed the corners together, because it allowed us to put more cheese inside.  It worked best to do one wrapper at a time or the water dried before I got them all filled and sealed.
– Heat your oil in a deep frying pan.  BE CAREFUL!  Hot oil will spatter and cause burns!  Place the won tons slowly and carefully in the oil.
– Fry until golden brown and puffy.
– Remove from oil and place on a paper towel to remove any excess oil.
– Cool to warm and serve!

Yields approx 30 won tons, depending on how full you fill each wrapper.
