Liege Waffles: The Most Amazing Waffles on Earth

After my brother-in-law raved about liege waffles on one of our trips to Utah, we decided we needed to try them.  But, we just never had time to do it while we were there.  That didn’t deter my sweet husband and he opted to try them at home.  We hit a snag, but I’ll get to that in a few minutes.  These were so delicious, we made them and crepes for Christmas breakfast… for nearly 20 people and they were demolished.  I was so sad there were no leftovers!  And I am not really a leftover kind of girl.  These liege waffles are heaven smothered in biscoff butter, whipped cream, berries and chocolate.

Leige Waffles: The Most Amazing Waffles on Earth

Liege Waffles Hero

The most amazing waffles you will ever make. A little time demanding, but sooo worth it. Make extra, because you'll want leftovers and these waffles freeze great! It's like eating heaven for breakfast.

Prep Time 1 hour
Cook Time 25 minutes
Additional Time 4 hours
Total Time 5 hours 25 minutes

Ingredients

  • 1/4 ounce active yeast (one packet or measure it out with a kitchen scale)
  • 1 1/2 Tbsp granulated sugar
  • 3/4 cup warm milk (around 100F or 40C)
  • 3 eggs
  • 1 cup melted butter
  • 1 Tbsp vanilla
  • 3 cups flour
  • 1/2 tsp salt
  • 3/4 - 1 cup pearl sugar (see text below recipe box)

Instructions

Add yeast and sugar to the warm milk and let stand for 10-15 minutes until the yeast softens and forms a foam.

Mix eggs, butter, and vanilla extract until evenly blended. Add to the yeast mixture and combine thoroughly.

Stir together salt and flour in a large bowl. Add the egg-yeast mixture to the flour, slowly mixing until a soft dough is formed.

Refrigerate in a covered bowl for 4-24 hours.

Cover with a clean kitchen towel and let warm back to room temperature.

Knead in the pearl sugar, but don't over handle the dough.

Pre-heat a Belgium Waffle iron. You can use a standard waffle iron, but the deeper pockets in a Belgium waffle hold more yummy toppings and don't crush the sugar pearls as badly.

Divide dough into 12 balls. Cover dough balls with the kitchen towel.

Lightly butter or grease the waffle iron. Place dough balls, one at a time, in the waffle iron and cook until golden brown. Cool for 2-3 minutes. The sugar is super hot and can cause burns if it's eaten immediately off the iron.

Repeat last step until all waffles have been cooked.

Finish off with your desired toppings. Berries, fresh fruits, whipped cream, chocolate chips, cinnamon, Biscoff butter and nuts are our favorites!

Notes

The dough for these waffles can be made as much as a day ahead or a few as 4 hours, which is perfect for breakfast or brunch events. The time-intensive work can be done ahead of time and then you just cook the waffles when you're ready to serve them. Just keep the dough in the fridge until you are ready to knead the pearl sugar into the dough and cook.

These waffles freeze great and it doesn't take much longer to make extra - you'll want leftovers, I promise! You can re-warm the waffles in the toaster to keep the crunchy outside texture.

What makes these waffles so amazing is the yeast-risen dough and the pearl sugar.  It makes a delicious, dense waffle and the pearl sugar makes these suitable to be topped with fruit or chocolate… or both, as you can see in my photo.  You can purchase pearl sugar on Amazon (or you can get it here a little cheaper if you already have an Amazon order just waiting to be submitted), at Whole Foods, IKEA and in some World Market locations.  If you like a sweeter waffle, add more of the sugar pearls.

After a failed trip to our World Market and deciding that the 20 minute drive across town to Whole Foods wasn’t worth it after the phone call we made to a very confused Whole Foods staff for the off-chance they actually did have it.  We were a bit discouraged.  But guess what?  You can make your own! if Prime shipping isn’t fast enough (or an option) and your nearest Whole Foods, World Market and IKEA are just too far, grab a small sauce pan and two ingredients and get ready to DIY Pearl Sugar right at home with yesterday’s post.

How to DIY Pearl Sugar and it’s Super Cheap

Pearl Sugar.  Ever heard of if?  I hadn’t until my brother-in-law was raving about liege waffles.  There’s actually lots of things you can do with pearl sugar though.  In our quest to try liege waffles, we found it wasn’t super easy to find and the price tag was a bit steep.  Good news, though.  You can DIY pearl sugar.  It gets better… you can DIY pearl sugar for pennies and a little patience.  I don’t have a lot of patience, but I probably have even fewer pennies to put toward little sugar balls.  So, are you ready for a super easy little project that will cost so little you’ll be doing a happy dance?  Your taste buds will after you bake with your DIY pearl sugar!

DIY Pearl Sugar

Prep time:  1 min

Cook time:  45 mins

Total time:  46 mins

Serves: ¾ cups

Pearl sugar can be used in a variety of ways, including in desserts, breakfast foods and beverages. Learn how to make your own pearl sugar for a fraction of what you'll find it in stores.
Ingredients
  • ¾ cups white sugar
  • 1 Tbsp water
Instructions
  1. Add water and sugar to a small sauce pan.
  2. Turn the stove on to low heat. Start out with it set as low as possible.
  3. Stir the mixture with a wooden spoon until small clumps of sugar form. Try not to create lots of smaller clumps, not a few big ones. If the mixture isn't clumping and is staying in loose sugar granules, add ½ teaspoon of water and keep stirring. Don't add more water though, or you'll end up with syrup instead of sugar clumps.
  4. Let the sugar sit on low heat for 20-30 minutes, stirring occasionally. You're basically drying the sugar clumps out so they don't fall apart when you move them.
  5. Remove from heat when the clumps are hard enough to transport without falling apart. Let the sugar cool completely! The clumps will harden as they cool off. Don't use them before they are completely cooled or you'll end up with a runny sugar mess instead of a little hardened sugar ball.
Notes
The bonus to this method is that you can double or even triple (or probably more, but I've never done that much so I can't vouch for it) the recipe and make a whole bunch at one time. It's a little time consuming, as you need to watch the sugar so it doesn't caramelize, but you can make a lot and then save it for later.

Amazingly Flaky Cresent Rolls That are to Die For

When I married Mr Napping, I got lucky.  He’s all kinds of amazing; one of my favorite kinds is that he bakes bread.  And he is fantastic at it.  I do alright baking bread, but he is really good at it.  And he enjoys it.  We have both made this recipe and they always turn out better when he makes them.  Maybe there really is something to baking with love.  But, unless it has chocolate in it, I’m probably not super excited about it.  But these… oh my gosh!  These cresent rolls are so amazing.  Confession: we made a double batch of these (almost 100 rolls) and took them with us on our road trip last Thanksgiving… we ate them all in about 5 days.  Just the four of us.  These are too delicious and are so easy to snack on.  While they are not the healthiest, there are certainly worse things (like the aforementioned chocolate) to binge on.

It seems like there are a lot of steps and that these take a lot of time.  The actual prep time is minimal when it comes to bread.  It’s pretty simple and really doesn’t take very long.  The majority of the time is spent waiting for the dough to rise.  So, don’t get overwhelmed by the time or all the steps.  It’s really easy and soo, sooo, sooooo worth it.  Promise.

Amazingly Flaky Cresent Rolls

Prep time:  3 hours

Cook time:  15 mins

Total time:  3 hours 15 mins

Serves: 48 Rolls

Ingredients
  • ½ ounce dry yeast
  • 1⅓ cup warm water (110F will dissolve the yeast without killing it)
  • 1 cup white sugar
  • 2 tsp salt
  • 4 eggs
  • 1 cup butter, softened
  • 8 cups bread flour (you can substitute all-purpose flour)
Instructions
  1. Dissolve yeast in warm water.
  2. Combine sugar, salt, eggs, and butter in a large mixing bowl. Mix in flour a cup at a time until smooth.
  3. Cover with a clean towel and put in a warm place. Let raise until double (about 1½ hours).
  4. Punch dough down and divide into quarters. Cover remaining quarters with the towel while you work with one quarter at a time.
  5. Roll each quarter into a 12-inch circle. Cut into 12 wedges. A pizza cutter works well for this.
  6. Roll each wedge up starting at the wide end. Tuck the point under the roll and place on a lightly greased baking sheet.
  7. Cover and let rise approximately 1 hour.
  8. Bake at 400F for approximately 12-15 minutes until golden brown.
  9. Lightly brush tops with butter while still hot.
  10. Serve and enjoy!

A Valentine’s Day Dinner the Whole Family Will Love

Around our home, Valentine’s Day is a family affair.  Mr Napping and I have usually been out in the last week to celebrate our anniversary, so we don’t feel the need to fight for reservations to a fancy dinner like a lot of the country does on February 14th.  We keep it simple with a Valentine’s Day dinner the whole family will love.  It just so happens that February is also National Hot Breakfast month and did you know that 91% of Americans have tried breakfast for dinner?!  We love breakfast for dinner nights.  So, this Valentine’s Day (or any time!), bring on the bacon and make a special Valentine’s Day dinner the whole family will love with a breakfast for dinner night.

So, I’m sure you know how to make breakfast for dinner.  It’s pretty much the same as making breakfast for breakfast, but the kids have annoyed you all day long already and you’re living on that Wheat Thin and half a grape you had for your actual breakfast.  Maybe that’s just me?  Anyway, I will give you some ideas and then you run with it, okay?  Great.

So, we decided on the Krusteaz Buttermilk Pancakes.  P.S. We have tried the blueberry waffles and the chocolate chip muffins – Oh my deliciousness!  The muffins are like homemade good… that’s pretty fantastic when you add 3 ingredients and pop that muffin tin in the oven.  We also indulged with fresh fruit, potato wedge-style hashbrowns, and eggs.  Bacon would’ve been up there too, but we were out.  It was a tragedy, which we drowned with syrup.  We also made whipped cream to top the pancakes, er, the fruit… okay, everything with.

What made this dinner so special…?  Two words: pancake pen.  We had a pancake pen our realtor graced us with after we bought our home, but the opening was so wide that any fun shapes expanded into unrecognizable blobs, so I was a little hesitant to try it again.  This time, the pen I used had a much smaller opening and was much more fun to draw with.  And it works really well as an icing bottle too.  Bonus!  If your kids are a little older, let them get in on the drawing fun too!  Of course, since it is a Valentine’s Day Dinner, our pancakes were heart-shaped and I added a bit of red food coloring for a little more fun.  Food coloring is totally optional, in case you’re anti-fun (or anti-artificial coloring… perhaps).
