Coconut Pecan Chip Cookies

One day last week, Mr Napping came home from work and decided he needed to make cookies.  I was mildly baffled, but who was I to stop him?  Besides, why would I turn down cookies?  These ended up being really, really, really yummy.  Who knew the man could bake too?  How did I get so dang lucky?!  Ready for this?  Your taste buds are gonna water…

COCONUT PECAN CHIP COOKIES
 
Ingredients:
– 1 cup butter, softened
– 1 cups packed brown sugar
– 1/2 cup white sugar
– 2 eggs
– 3 Tbsp milk
– 2 tsp vanilla
– 1 1/4 cups flour
– 1 tsp baking soda
– 1/2 tsp salt
– 3 1/2 cups rolled oats
– 1 1/4 cup shredded coconut
– 1 cup chopped pecans
– 2 cups of cinnamon, butterscotch or chocolate chips
Directions:
– Preheat oven to 350F.

– In a large bowl, cream together the butter, brown sugar and white sugar until smooth.
– Beat in the eggs one at a time.
– Stir in the milk and vanilla.
– Add the flour, baking soda and salt.  Combine with the sugar mixture until well blended.
– Add in the oats, chips. pecans and coconut until evenly mixed.
– Drop 1″ balls onto ungreased cookie sheet.

Bake 10 to 12 minutes.  If you want a little crispier cookie add 1-2 minutes.  Remove from oven and cool on wire rack.  Store in an air-tight container.

Yield about 5 1/2 dozen cookies

 

*We tried cinnamon chips, butterscotch chips and chocolate chips.  The cinnamon were the undisputed favorites.  My second favorites were the chocolate chips, but I could take or leave butterscotch.  Mr Napping liked those ones a lot though.

{Friday Favorites} Books

So, I wanted to try something new.  This month, every Friday will be a Friday Favorites post.  I’ll share my favorites on a topic with you and I hope you’ll share yours too.  Just leave a comment with your favorites and maybe we can help each other find some neat, new things.

This week:  books.  I will be nursing again in a little over a month and I found that reading was the best way for me to not completely despise the time I had to sit off in another room alone with my half-asleep baby.  With Little J, I often felt off in exile while the rest of the family was watching a movie or whatever.  Little J WOULD NOT breastfeed under a blanket, so if we were in public, I had to go hide while he ate.  It was frustrating.  However, I’ve always liked to read.  Being able to do so with my phone helped me tolerate the breastfeeding phase (although I was none too sad to wean either).

Year of Dates – 12 date nights in one romantic gift

Looking for a gift for your sweetheart? One that will keep on giving long after the wrapping paper is discarded? Maybe a gift that both of you can enjoy? If that sounds awesome, then this Year of Dates kit is just what you’re looking for.

But, this isn’t just another Year of Dates gift idea.

Lots of other Year of Dates posts have the date ideas, the plan, and that’s it. I knew that wasn’t going to work for my husband and I. Not with our busy schedules, our houseful of kids, our jobs, church responsibilities and the never-ending list of to-dos and projects. We need something that will make date night easier, not something that would require more work later on.

 

A YEAR OF DATES GIFT THAT ACTUALLY SIMPLIFIES DATE NIGHT

Date night kits are great. But they can be expensive, and DIY kits can be a lot of work. I needed something that was inexpensive – we’re on a (tight) budget here – and something that wouldn’t need a lot of planning when it came date time. Here’s what I came up with for our kit:

  • one date for each month of the year.
  • various levels of preparation to choose from, depending on how much time was available.
  • totally pre-planned and (mostly) paid for to help us stay within our budget.

I have seen kits that easily cost a couple hundred dollars to put together. I had about a quarter of that to use and had to get creative to accomplish the pre-paid part. So, here’s how I pulled this together.

 

A YEAR OF DATES – 12 PRE-PLANNED, PRE-PAID DATE NIGHTS IN ONE ROMANTIC GIFT

 

MAKING A YEAR OF DATES GIFT: THE BASICS

  • I used 9″x12″ Mailing Envelopes to hold each date’s information and extras. There were two that were stuffed pretty full, but the other 10 were mostly flat.
  • I introduced my husband to the kit with a little note, explaining what was in the kit and how to use it. It was just a quick handwritten note.
  • Each date has an information page taped on the front of the envelop, detailing some of the things that would be nice to know, without giving away the date. I’ll go into more detail on that in a few minutes.
  • I just tied the envelopes together with baker’s twine and put them in a cardboard box. Then I wrapped it in wrapping paper. Simple, budget-friendly, effective.
  • There is also an information sheet inside each envelop detailing the date and how to carry it out. Again, more detail on that momentarily.

 

HOW TO MAKE A YEAR OF DATES GIFT: THE DATES

These are the dates I included in our kit.  Adjust what fits your life, schedules, location and family.

For me, budget was one of the most important factors in my kit, so I aimed for dates that were budget-conscious. Figuring out ways to pay for as much as possible up front helped me keep that in my plans.

I found the best way to save money on date night without sacrificing too much were to have dates at home, after the kids were in bed. At home dates help us take time for each other while helping us feel like we don’t need to spend money on a babysitter and the date.

It also helped make our dates out a little more special.

AT HOME DATES

  • Game Night. We enjoy board and card games, so this envelop had the info sheet inviting him to choose a game or two from our game cabinet. I also included our Truth or Dare: Couple’s Edition game.

  • Movie Night In. We have a pretty sweet little theater set-up right at home with a projector and drop-down screen. Because of this, we enjoy movies at home probably more than we do ones in the theater. We can wear pajamas, pause for bathroom or refreshment breaks and there’s no annoying teenagers behind you talking the whole time or a seven year old kicking the back of your chair.

    In the envelop: I made up fake movie tickets and included those. Include a couple favorite candies to sweeten the deal.

  • Game Night. We have a Wii console we enjoy. This makes for a fun night together, a little good-natured competition. And it’s more interactive than watching a movie. Sometimes, we go all out with a Just Dance competition and sometimes we keep it to a MarioKart tournament.

  • Fondue Night. This could be a whole fondue dinner with cheese fondue and bread for appetizers followed by an oil fondue to cook meat in and concluding with a dessert fondue. We enjoy dessert fondue with chocolate, fruits and marshmallows.

    In the envelop: I included $10 for ingredients. 

  • Nerf Gun War. We invested in four of the basic models about a year ago and they are a blast, I think it cost us about $25 for all four.

    In the envelop: a new pack of darts, to help replenish the ones we’ve lost over the last year. 

     
  • Spa Night. This envelop included some massage oils, a couple candles, bath salts and sugar scrub, some bubble bath, a small bag of large river rocks (for a hot stone massage) and a scalp massager. I made the oils, scrub, salts and candles – from recipes found on pinterest; the bubble bath was some we had from the kids.

    In the envelop: massage oils, candles, bath salts, sugar scrub, bubble bath, river rocks, scalp massager.

     

  • Romantic Night. I wrote “For your eyes only!” on the seal, hoping that would be clue enough to my husband that he shouldn’t open that one while our parents were sitting there, watching us open gifts and maybe that his interest would be piqued enough to do this date.

    In the envelop: A new little lacy something, a small bottle of bubble bath, some lotion, some intimacy items and candles and chocolates. A Between the Sheets game would be perfect to include in this date.

 

OUT OF THE HOUSE DATES

  • Mini Golf.  We scored a coupon for a free game from a hole-in-one a while back. Like two or three YEARS ago. But, there was no expiration date on it. I put in that coupon and a $5 bill to cover the cost of the other player. See if you have any BOGO coupons or punch cards that you can use to keep costs low.

    In the envelop: free mini golf coupon, $5 cash
  • Movie Night Out. We don’t go to the movie theater often. It’s a treat for us and this was a splurge date. This date will hopefully cost less than $10 out of pocket, when we combine it with the gift card and cash.

    In the envelop: I was able to use some credit card reward points we had and got a $25 gift card for Fandango. I included another $5 for extra treats.
 
  • Dinner Out.  This was another splurge. I used some more of our credit card rewards to get a $25 gift card to Outback Steakhouse. I also included $15 in cash as well. The gift card and extra cash covered both our meals and half the tip. We also like to get gift card packs at Costco for a discount. They make great gifts for others and we save a little money too.

    In the envelop: $25 restaurant gift card, $15 in cash
  • Shooting.  We enjoy some good target practice and are lucky enough to live about a block and a half from some BLM land.  We can get a sitter and go out for a couple hours for the cost of ammo and gas in the ATV’s.

  • Sonic Slushie Date. We are regulars at the drive-in chain, especially during the hot summers in the desert. I included a $15 gift card in this envelop, but it actually only cost me $11. You can reload Sonic gift cards; and, we still had a few dollars on one that we’d previously been gifted, so I just added my $11 to what was already on the card and called it good. We could get dinner for the whole family or several trips for slushies out of the $15.

MAKING A YEAR OF DATES GIFT: THE DETAILS

  • Information Cover Page
    I taped this page to each envelop and used a highlighter to indicate the appropriate option for that date.Things I included were:
    – Whether the date was at home or out of the house, so we can decide if we want a night out or a night in.
    – If we needed specific weather for the date – mini golfing in February… uh, no.
    – Whether it was something we could do with our boys or if we need to get a sitter. Sometimes, a sitter just isn’t available. We are lucky enough to live close to grandma (and free babysitting), but it isn’t always available.
    – How much more money the date was estimated to cost out of pocket. We can choose a date that fits our budget and enjoy it without worrying that we will be breaking the bank.
    – If there is prior preparation that needs to be done and how long it will take to do. For example, Fondue Night may require a little grocery shopping before hand.
    – How long the date will last. If we have all day, a long date is no big deal. But, if we only have an hour or two, we don’t have to worry so much about cutting our date short. It’s already planned to help us keep our schedule.
    – And a spot for other info. For the most part, I left this blank.

20 (Practically Free) Date Night Ideas

Valentine’s Day is less than two weeks away.  Do you have plans?

Growing up, Valentine’s Day wasn’t a holiday for my parents.  Meaning, it wasn’t a holiday just for romantic love.  We didn’t watch them get all dressed up, exchange flowers and chocolates and go off to a fancy dinner together.  It was more of a day to remember all the people you love, in whatever form it might be.  I’m not sure if my parents intentionally taught me to look at Valentine’s Day that way or if it just worked out like that, but it’s the same approach we’ve taken with our kids.  They get to see Mom & Dad celebrate each other on our anniversary and then we all celebrate the people we love six days later.  It works for us.

However, I’m a romantic at heart and a huge supporter of Date Night.  So, I usually do try to do something with Mr Napping that’s a little more special at least a couple time a month.  Something that says, “Hey, I thought about you today while I was doing the dishes and changing the bajillionth diaper.”  Even if it’s something small.  While you can definitely use these ideas on the 14th, you could really do most of them anytime.

AT HOME DATES:
–  Movie Night In.  Set up a snack bar with popcorn and different seasonings.  The photo below is an affiliate link on Amazon to some of our favorite seasonings.  I have seen individual bottles at Wal-Mart as well.  Theme your popcorn bar however you want!

Big Hero 6 Party Popcorn Bar Toppings

– Fondue Night.  Slice up some fruit, grab a bag of marshmallows and a package of graham crackers.  Heat up a bag of chocolate chips and you’re all set.  Enjoy.
– Nerf Gun War.  Grab some kitchen chairs and blankets to set up your bases, then it’s every man (or woman) for themselves.  Our guns of choice are the basic Nerf N-Strike Nite Finder EX-3 (Affiliate link, click to see photo.  I couldn’t get it to show up.).
– Game night.  Pull out your favorite board and card games.  Boot up the game console.  Play hide & seek.  You decide on the consolation prizes.
– At-home spa night.  Use oils and lotions to give each other a massage.  Soak in a bubble bath and enjoy a little bubbly (apple juice and sprite or 7up is a quick and cheap substitute for sparkling cider).  Listen to music and read a magazine together (or read your own magazines).  Enjoy each other.
– Mini golf.  Set up your own course with things from around the house.  Under chairs, over book ramps, around the kitchen island, under the dining room table, whatever you can come up with.  Use small boxes on their sides or ceramic mugs as your “holes”.  If you have access to a set of kids’ golf clubs, those work great.  You can also use brooms, a pool noodle, or other toy as your clubs.  Balls of various sizes would add a twist to the activity.  Use what you have.

6th Anniversary Date DIY Indoor Mini Golf
– Teach each other something.  Show her how to change a flat or check the tire pressure.  Introduce her to the power tools in the garage.  Show him how to use the sewing machine.  Or learn something new together.  Half the fun is learning from your mistakes and figuring it out together.
– Build something.  You can find a woodworking project to take on, make a quilt together, get that gallery wall hung you keep talking about.
– Lego Contest.  Pull out the Lego collection and have a contest to see who can build the coolest car, the tallest tower, the biggest castle or whatever you can agree upon.
– Blanket Fort.  Build a blanket fort together.  The bigger and more extravagant, the better.  Grab some take out and eat in your fort.  Watch a movie, play a game or whatever else you can think of to do together in your fort.

#PopSecretForts
– Go camping.  In the living room.  Roll out sleeping bags.  Toast s’mores around the stove or make a fondue version by dipping graham crackers and marshmallows in melted chocolate.  Take a pack of glow in the dark stars and make constellations on the wall.
– Try a new recipe together.  Share some with friends or neighbors.  Bring out your inner child and leave them doorbell ditch style with a fun little note.

DATES OUT:
– Sonic Slushie/Ice Cream Date.  McDonald’s has $1 sundaes for a super cheap date out.
– Play at the park.  Or in the snow.  Depending on the time of year.
– Scavenger hunt.  Choose a place to go together and make a list of things you might see.  If you choose the mall, hunt for a woman with red fingernails, a baby with a sippy cup, and an elderly man in a suit jacket and the like.  You could visit the bookstore, the pet store, the park, the library, a restaurant (enjoy a dessert together while you hunt).
– Hike/Nature Walk with a picnic.
– Fly a kite.
– Four-wheeling/ATV-ing or dirt biking.  See if you can borrow equipment.
– Bicycle rides.
– Movie on the laptop.  Find somewhere unusual to watch your movie.  The park?  The bookstore?  On top of a mountain?
– Candle light dinner in the park (check fire restrictions).  Or on a mountain top.  Or on a friend’s front lawn.  Clear it with your friends first, but don’t tell your sweetie.  Just go set up your picnic on their front lawn.

Gelatin Birdseed Feeders

I have been struggling lately to keep my rambunctious, energetic boys entertained.  All I want to do is sit all day.  I have a mile-long list of third-trimester pregnancy woes that leave me with the energy of… something without very much energy.  And a similarly long list of aches and pains, not limited to but including the occasional contraction that makes me think there’s no way this baby will reach his due date.

But, back to the boys that aren’t causing me physical discomfort (most of  the time).  They need to move.  They need something that keeps them active.  Otherwise, they use that energy for evil mischief.   I need something that doesn’t have me chasing them all over.  So, we’ve been doing a lot of  “projects” and “experiments” lately.  The kind that mean I can pull a bar stool over to the island and sit for the duration of said project.  These birdseed feeders totally fit the bill.

I bought the birdseed last spring and had intended to do pinecone and peanut butter feeders.  And then the bag sat on top of my fridge for at least six months.  I decided we ought to use it, but the thought of giving my boys peanut butter and birdseed sounded like a big mess for me to clean up during nap time.  I remembered the gelatin I used a couple weeks ago to make the DIY Gel Air Fresheners and wondered if that would work.  I googled it and sure enough, you can find other recipes that use gelatin.  By this time, my children were climbing up the cabinets and I decided to just wing it rather than let them tear down the house while I searched for instructions.  Here’s what we did:

GELATIN BIRDSEED FEEDERS

Materials:
– 2/3 cup birdseed (we got ours at a local pet store, but Wal-Mart -and maybe Target, not sure on that though – carry it too)
– 1 packet of Knox Unflavored Gelatin
– 1/4 cup water
– 1/2 tsp salt
– Silicone molds
– String or twine – something neutral

Directions:
– Heat the 1/4 cup water in a microwave safe dish for two minutes, or until the water boils.
– Pour the gelatin into the boiling water and stir until completely dissolved.  I found a wire whisk worked the best.
– Add the salt and dissolve it too.  I don’t know if you really need this or not; but, in the air fresheners it was added to help prevent mold.  I figured I would add it rather than grow mold in my backyard.  It hasn’t seemed to deter the birds any, as far as flavor.
– Stir in the birdseed 1/3 cup at a time and make sure the gelatin coats all the seeds evenly.  You don’t want clumps, they’ll fall apart later.
– Pour the birdseed mixture into your silicone molds.  Cut your twine or string and press the ends into the mold cavities and cover with the seed mixture.  The string should make a loop you can hang the feeders by later.
– Allow to solidify.  I stuck ours in the fridge to help it along because my boys are always wearing what we call “impatient pants” and wanted to hang them up NOW.  They were awfully upset with me when I told them we had to wait.  The fridge helped in two ways: solidifying the gelatin faster and out of sight, out of mind.
– When everything is solid, you can hang the feeders.  You may need to let them dry out for a day or two before you actually hang them outside, especially if it’s cold where you live.  Otherwise, the sunshine will probably help it along; and, in that case, hang to your heart’s content.
