Weekend Wander #125

Well, summer is in “go mode” and I hope you are enjoying warm, sunny days and nights full of memories to last a life time.  Unfortunately, we are swimming in germs and have been for about a week and a half.  Poor Monkey has impetigo on his lips and under his nose.  I won’t totally gross you out, but it’s sore and painful and I feel crazy bad for him every time I look at him.  P.S. don’t Google that while you’re eating… you’ll wanna throw up.  Learn from my mistake.  Poor Gator has another sinus infection… so he’s a bundle of boogers.  And Mr Napping and I – hello, strep throat (probably from Monkey’ impetigo).  Don’t you wish you were here?!?  No?  Why ever not?  Actually, we are miserable and I wouldn’t wish this on anyone.

If When we finally get well again, we will start our summer fun.  Summer is my favorite and I absolutely love a good day out in the sunshine.  But, there’s the time when it’s just too dang hot to be outside.  So, out comes the glue gun.  Or sewing machine.  Or Cricky, my Cricut.  Or what have you.  So…. whatcha been doing?

Gorgeous!  This makes me want to tell my Homeowner’s Association to go play on the freeway and just put up my own sign.  But, I have to submit a proposal and a $100 application fee before I can even consider making any changes in my front yard.  Curse the HOA.

Hello, Sunshine Printable

So, has it been a bajillion trillion years since I had a printable on here?  What’s with that, right?  Well, I’ll tell ya what’s with that.  Life.  That’s what happened.  And an Etsy shop that specializes in digital media.  And trying to get my blog back running, instead of kind of stumbling along like it has been… so that’s what’s with that.  Any questions?

So, did anyone else totally miss the memo that Spring was just gonna be a no-show this year?  Or was that just me?  Now, in all fairness, we have had some Spring-y weather over the last month – but nothing like we usually get.  A few stormy, cloudy days here and there (like when we wanted to landscape our backyard… of course, or when we have a three-day weekend, right?).  However, summer is definitely on it’s way in.  And to that I say, “Hello, Sunshine!  Where have you been all winter long?!” and “Bring on the beach, baby!”  This girl, and her printable, are are ready for some summertime!


File is formatted to 8×10″.  You can right click, save as and then print from your computer.  Use it in a summer vignette, for cards, as art work in a frame.  Use it as your little heart desires… as long as it’s for personal use only, please.  Don’t resell it or something, kay?  ‘Cause, if you didn’t read that first paragraph, it’s been rough lately and it’s not nice to kick someone when they are down…  Okay, so save that super cute file to your computer (because you might need it later).  And then get out there and enjoy that sunshine!  Don’t forget the sunblock!

Sweet Potato Fries

Even if you don’t like sweet potatoes, you should try these.  If you still aren’t a fan, then you probably really don’t like them.  I used to run from “Sweet Potato” anything, but I learned the secret to hiding the icky and bringing out the yum!  In the last six months or so, Mr. Napping and I have eaten at Outback Steakhouse a couple times.  Usually, I’ll get a steak and some coconut shrimp, but always, ALWAYS, I get the sweet potato fries.  They are so delish!  But I can’t afford $25-30 for a handful of sweet potato fries, even if it does come with a yummy steak and shrimp.  It took some trial and error, but I think I finally figured out how to get that scrumptious sweet potato fry right from my own oven.

SWEET POTATO FRIES
Sweet Potato Fries

 

Print This Recipe
Sweet Potato Fries

Prep time:  20 mins

Cook time:  12 mins

Total time:  32 mins

Serves: 4 servings

Ingredients
  • 2 large Sweet Potato, peeled
  • Olive Oil Spray (any oil will work really)
  • Seasoning Mix (Recipe below)
  • Small bowl of water
  • Honey (optional)
Instructions
  1. Preheat the oven to 475F.
  2. Cut the potato into long skinny strips.
  3. Mix the ingredients for the seasoning mix in a container, one with an air tight lid.
  4. Dip the potatoes in the water and shake off any excess.
  5. Drop the potatoes into the seasoning mix, put the lid on and shake until all the potatoes are well-coated.
  6. Spray a large baking sheet with the olive oil (don't saturate the pan, but coat it well) and lay the seasoned potatoes on the pan, in a single layer, not touching each other.
  7. Bake for 5-7 minutes and then flip the fries and bake for another 5-7 minutes.
  8. Let cool. Lightly drizzle with honey, if desired. And I mean super lightly, just barely enough to taste.
  9. *Toss any extra seasonings. It's not much. Besides, the sugars clump, the flour dissolves and it's more mess the second time around with leftover seasonings. It's not worth it. That's actually why some of my fries are a little scorched, there wasn't enough flour in some leftover seasoning and the sugars scorched. It didn't taste bad, but my pans were a tragic mess. I had to let them soak for two days before I got everything off. Usually it's not big deal to clean them. So, be warned. You can save them, but add extra flour before you use it again to prevent the burnt sugar.

Ingredients
  • Seasoning Mix:
  • ¼ cup flour
  • ⅛ c sugar
  • ⅛ c brown sugar
  • 2 tsp cinnamon

  1. Mix together in a small dish.

I’m done with the recipe, but if you’re up for some story time, sit tight.  Like I mentioned before, these are worth a try even if you don’t like sweet potatoes.  When I was little, my mom made sweet potatoes with marshmallows for dinner one night.  Oh, my gag.  Yuck.  Each of my siblings and I were given a spoonful and told we couldn’t get down from the table until it was gone.  We sat there for, I kid you not, four hours.  At that point the deal was changed to three bites and straight to bed (it was like 10pm at that point).  Oh, it was awful.  The most disgusting three bites of anything I have ever eaten.  And I refused to eat anything with any semblance of  sweet potatoes or yams, regardless of the prep method.  Blech!  And then Mr Napping ordered the Outback fries and I ate almost his whole plate.  I still won’t touch candied yams, but this fry version is to die for.

Father’s Day is coming up… and I have mixed feelings.  Yay!  I love the men in my life.  Ugh, I hate gifting to the men in my life.  They are so difficult!  My husband said it well the other day.  “If I want something and we can afford it, I’ve probably already bought it.”  This is very true.  My dad wants nothing, ever.  At least that’s what he says.  And my brother… he learned from my dad.
