Turkey Noodle Soup in Under 30 Minutes

Oh soup, what’s for dinner?! If you’re looking for a quick and healthy dinner recipe, this is it! It won’t mess up your newly set resolutions and it will use up any leftover turkey from Christmas dinner. And it’s delicious. It’s Turkey Noodle Soup in UNDER 30 minutes!

Yep, you read that right. Dinner in under 30 minutes – and we’re including cook time there. This recipe is a perfect go-to for busy families and leftover nights! Ready to get your soup on? Let’s do this!

TURKEY NOODLE SOUP in under 30 minutes

Turkey Noodle Soup - Ready in 30 minutes or less

Yield: Serves 4-6

Turkey Noodle Soup

Turkey Noodle Soup - Ready in 30 minutes or less

A quick, delicious and healthy soup the whole family will enjoy.

Prep Time 15 minutes
Cook Time 15 minutes
Total Time 30 minutes

Ingredients

  • 1 1/2 cups Turkey Meat, pre-cooked and cubed
  • 30 oz Chicken Broth
  • 1 lb Rotini Pasta
  • 12 oz package of Frozen Mixed Vegetables

Instructions

Add the broth to a large pot on medium-high on the stove. Add any additional seasonings you might want. I added a tsp of garlic because we love us some garlic.

When the broth warms and starts to simmer add your noodles, mixed vegetables and the turkey meat.

Cover and simmer for 7-9 minutes or cook for the duration directed on the pasta packaging. Your soup is ready when the noodles are tender.

Allow to cool slightly and serve.

Notes

You could substitute the turkey with chicken dices or pre-cooked hamburger meat. Or omit it entirely.

If you use raw meat dices instead of pre-cooked, add them when you put in the pasta. Ensure they cook thoroughly.

The hardest part of this meal is cutting up the turkey. Really. Everything else is just throw in a pot and turn on the stove. Stir it every once in a while and you’ll have a delicious dinner ready in less than 30 minutes.

My kids loved it. And it was even finger-food-friendly for the baby – I just drained the juice off and he went to town.

I love that our Turkey Noodle Soup was delicious, super fast, healthy (under 500 calories) and that my whole family enjoyed it!

The holidays are over and school (finally!) started back up again. Which means our lives are back into a routine of sorts. Which means that I’ve gotten back into my slightly more structured life. I’ve gotten back to more regular meal planning, which has been good for us in more than one way: our budget, our waistlines, and our overall health. I definitely feel much better when I’m eating more healthy. But we have a routine because we’re busier now and that means I don’t have a lot of time to spend in the kitchen. I need quick meals that are delicious and family-friendly. So, with the help of Progresso® Light soup, I came up with this Enchilada Casserole.

Progresso® Light Chicken and Cheese Enchildad Soup Enchilada Casserole

Enchiladas in a fraction of the time.
Ingredients
  • Progresso® Light Soup Enchilada Casserole Ingredients
  • - Progresso® Light Soup Chicken and Cheese Enchilada Flavor
  • - 1 cup Enchilada Sauce
  • - 3 large Mushrooms, sliced
  • - 3 Green Onion Stalks, sliced
  • - 2 cups Shredded Cheese
  • - 4 Wheat Tortillas
  • - 1 large Red Pepper, cut into slices
  • - 1 medium Roma Tomato, sliced
  • - 1 cup cilantro, sliced
  • *We had some rotisserie chicken in the fridge from a meal a couple days before, so I cut it up and added it to our enchiladas as well. The soup has chicken in it already, so you don't really need to add more. But, I needed to use ours up and three of the four males in my home are meat-lovers, so no one complained.
Instructions
  1. - In a 9x13" pan, pour about ½ cup of enchilada sauce in the bottom of the pan. Spread the sauce so that it covers the entire bottom of the pan. Progresso® Light Soup Enchilada Casserole Enchilada Sauce Layer
  2. - Cut the tortillas in half. Arrange them on top of the enchilada sauce with the flat edge against the edge of the pan.Progresso® Light Soup Enchilada Casserole Tortilla Layer
  3. - Pour half the can of Progresso® Light Soup on top of the tortillas. Spread to completely cover the tortillas. Progresso® Light Soup Enchilada Casserole Soup Layer
  4. - Sprinkle cilantro, mushrooms and chicken pieces (if desired) on top of the soup. Progresso® Light Soup Enchilada Casserole Cilantro & Mushroom Layer
  5. - Sprinkle ¾ cup of shredded cheese on top of the cilantro and mushroom pieces. Progresso® Light Soup Enchilada Casserole Shredded Cheese Layer
  6. - Repeat the steps above. Add another layer of tortillas, then another layer of soup, another layer of cilantro and mushrooms, and another ¾ cup layer of shredded cheese and the rest of the enchilada sauce.
  7. - Lay out red pepper slices on top of the shredded cheese and then put a tomato slice in the middle of each pepper slice. Progresso® Light Soup Enchilada Casserole Red Peppers & Tomatoes Layer
  8. - Sprinkle green onion slices on top.
  9. - Cover and bake at 350ºF for 20-25 minutes. Then, uncover and sprinkle the remaining cheese on top. Bake another 5-10 minutes until the cheese is melted, bubbly and lightly toasted.
  10. - Remove from oven and allow to set for 10 minutes - your layers will stay together better if you do.

I will admit that this isn’t quite as amazing as my cream cheese chicken enchiladas, but those take nearly an hour to put together and half an hour in the oven. This is a great alternative to that with half the prep time. We will be enjoying this lower-prep-time Enchilada Casserole as a weekday meal and saving the full-on enchiladas for special occasions… like Sunday Family Dinners and birthdays.

We have had some fun adventures, a busy Christmas full of family and are getting ready for the new year to bring some more fun. Have you been busy too? SPREAD CHEER WITH SIMPLE SURPRISES

The kids are out of school and I am trying to find a balance of attention for them and not letting my other responsibilities get left behind or completely overwhelm me. We have been looking for lots of fun activities that aren’t too time consuming or involve a lot of preparation or supplies. We’re working with little attention spans and all. That also lets me spend time with my boys and still not have too much mom guilt when I tell them I need to do some work or a few chores.

Betty Crocker®  cookie mixes have come to our rescue more than once this past week! We love cookies… because, who doesn’t? We used Betty Crocker®  mixes to make our cookies for Santa and he loved them. He told me so. We’ve shared cookies with lots of family and friends this past week too. It’s been fun to spread some cheer with simple surprises, like a plate of cookies.

I knew that Christmas Eve would be a busy day and we had quite a bit of baking we needed to do. Among the pies, rolls and waffle dough we needed to make we also needed to make cookies for Santa. I knew we weren’t going to have a lot of time so I went with one of my favorite flavor combinations. Peanut butter and chocolate!

I picked up the Betty Crocker® peanut butter cookie mix at Walmart. I grabbed a sugar cookie one too because I knew my kids would be home for the next three weeks and we might need a project to do. We haven’t made the sugar cookies yet, but there’s still two weeks of Winter Break so I’m not tucking it away into the cupboard just yet.

We made peanut butter blossoms for Santa on Christmas Eve and it was perfect. My boys love to help mix things up in the mixer and Betty Crocker® cookie mixes are perfect. They are quick and there’s just enough ingredients that my boys stay interested. We rolled the dough so my boys even got to help with getting it ready to bake, which they usually don’t get to do.

While the cookies baked, my boys helped me unwrap the chocolates to top the cookies with. They did really well and didn’t even eat that many of the chocolates, although that was their favorite part, of course.

We will be making some more cookies while we wait for New Year’s tomorrow, although I’m not sure what kind of Betty Crocker® mix we’ll use yet. There are so many to choose from. I love being able to get my kids in the kitchen in a low-stress, fun project that we can do together. It’s something we all enjoy. And the end result is pretty great too. Another simple surprise we can all enjoy.

Scalloped Potatoes & Ham Casserole with Betty Crocker Potatoes

We have always been a meat-and-potato family. When I think about dinners at my grandparent’s home in Idaho, hearty meals with meat, potatoes, garden-grown veggies, maybe a salad and something sweet for dessert around a big, crowded table are the memories I recall. The almost-too-warm kitchen flooding the dining area with heat from the oven and stove. The close quarters as everyone squeezes in around the table expanded with as many leaves as it will hold make passing the food a little difficult at times, but no one complains. The good food and family time are all worth it.

One of my favorite dishes is my grandma’s Scalloped Potato Bacon Casserole. She always made hers with fresh potatoes, homemade sauce and chunks of leftover ham, but I don’t know how she found the time to do all that. And that’s where I look to Betty Crocker to help me out. Betty Crocker’s Scalloped Potatoes are wonderful for this recipe and cut down on the preparation time immensely. And I have the option to throw it all in the slow cooker and just let it cook. This is especially nice when I’m preparing lots of other dishes for the same meal. I’ve created a few short cuts to fit this childhood favorite in with my family’s crazy schedules and kept this traditional dish alive and thriving in our family.

Betty Crocker Potatoes Scalloped Potatoes and Ham Casserole

Scalloped Potato & Ham Casserole

Prep time:  10 mins

Cook time:  40 mins

Total time:  50 mins

Serves: Serves 4-6

Scalloped Potatoes and Ham Casserole that makes a great side dish or a light meal all on its own. Simple and delicious, a family favorite!
Ingredients
  • 1 package Betty Crocker's Sliced Potatoes - I chose Parmesan & Asiago
  • 1 cup ham dices or bacon bits
  • 2 cups Grated Cheese
  • Green onion slices, option
  • Betty Crocker Potatoes Scalloped Potatoes and Ham Casserole Betty Crocker Parmasean & Asiago Potatoes
Instructions
  1. Preheat oven as directed on the package of Betty Crocker Potatoes.
  2. Mix up the sauce as directed on the package of Betty Crocker's Scalloped Potatoes in a large oven-safe casserole dish.
  3. Layer half the potato slices in the sauce on the bottom of the casserole dish.
  4. Sprinkle in half of the ham dices or bacon bits.
  5. Sprinkle in half the cheese.
  6. Repeat the layers - Potato slices, ham or bacon pieces and top with cheese. Garnish with green onions, if desired.
  7. Bake as directed on the scalloped potatoes package.

  9. Let set 5-7 mins and serve,

This is a regular dish for all our family holiday dinners, but it makes an appearance on regular old weeknights at our house too. Grandma makes it all from scratch and it always disappears faster than I wish it would. But I don’t get as disappointed as I used to when I was younger, knowing it was going to be a while before I got to eat it again. But this recipe works well and satisfies my longing for Grandma’s Scalloped Potatoes & Ham Casserole.

I love this time of year. The lights, the colors, the music, the movies, the good will and the food. I love holiday food, and my sweet tooth does too. I love the hunt for the perfect holiday dessert.

But the holidays can be stressful too. They are busy, they are bustling and there is always something to do or some where to be. Add in a big family meal with all the traditional fixings and the favorite family recipes. Things can get kinda of hectic and crazy.

My grandma has always made the Thanksgiving pies and they are amazing. Her apple pie has a special little spot in my heart. I love using her recipe and making apple pie from scratch.
