Fiber One Cheesecake Ice Cream Sundaes

We started back to school this week.  Our schedules are getting fuller and we are going to be busy as ever.  Since it’s only the middle of August, we still have very summertime temperatures.  We are trying to squeeze a little bit of summer in around our other schedules while the weather is still nice.  For me, that means dessert can still be made mostly of ice cream.  YUM.

I love ice cream, but it’s not my only favorite dessert.  Fiber One has a new sweet little snack out: Cheesecake Bars.  That’s right… cheesecake bars.  These sweet treats are only 150 calories with 6 grams fat and each bar contain 5 grams of fiber, which is 20% of your daily value of fiber.  They are available in strawberry and salted caramel flavors.  They are on shelves nationwide at major grocery and retail stores.  I couldn’t resist my cheesecake temptation and came up with a super simple, perfect summer dessert.

CHEESECAKE ICE CREAM SUNDAE
with NEW FIBER ONE CHEESECAKE BARS

Ingredients:
– Vanilla Ice Cream
– Fiber One Cheesecake Bar
– Additional toppings (optional)

Directions:
– Chop a Fiber One Cheesecake Bar into small cubes.
– Put approximately 1/2 cup of vanilla ice cream into a bowl and top with the cheese cake dices and any other toppings desired.  I found 1/2 cup ice cream to 1 cheesecake bar to be a good ratio.  Adjust to personal preferences if desired.
– Serve.

I love supporting our local girl scout troops, but I’m the first to admit that $5 a box is a bit steep for my budget. I stock up what I can, but when our freezer stash is out, we head to Wal-Mart when we’re jonesing for some Thin Mint cookies. The Great Value Fudge Mint cookies are a sufficient substitute.

And at less than half the price, it’s okay to use nearly a whole package in a Thin Mint Brownie Pie and not feel guilty. At least about the cost. The calories might be a different story. But, sometimes you just got have a little bit of heaven.

Because this pie is a little bit of heaven.

The Best Triple Chocolate Thin Mint Brownie Pie

Girl Scout Thin Mint Brownie Pie

Take your thin mint cookie obsession and kick it into overload with this amazing triple chocolate thin mint brownie pie that takes less than an hour to whip up!

Prep Time 20 minutes
Cook Time 35 minutes
Total Time 55 minutes

Ingredients

  • 1 box brownie mix
  • Ingredients required for your brownie mix, typically includes: 1 egg, 1/4 cup water and 1/2 cup oil. I use 1/4 cup oil and 1/4 cup applesauce to make them a little less oily and unhealthy. But these are triple chocolate brownies... you might not be too concerned about the calories.
  • 1/3 cup chocolate syrup
  • 1 package Thin Mint Cookies

Instructions

Preheat the oven as directed on the back of the brownie mix box.

Mix up the brownies as per the instructions on the back of the box. Substitiute half the oil with applesauce for a less oily brownie.

Pour half the batter into the bottom of a lightly-greased 8-inch pie plate.

Put down a layer of mint cookies.

Pour the chocolate syrup on top of the cookies and spread with a spatula to evenly cover the cookies.

Pour the rest of the batter on top of the syrup and gently shake the pan to level out the batter.

Bake as directed on the brownie box or until a toothpick inserted into the pie comes out clean.

Cool, slice and serve with a scoop of ice cream or frozen yogurt.

Jello Snickerdoodle Cookies

Do you love snickerdoodles? Then, I’ve got a fun twist for you today. These Jello Snickerdoodle cookies take all the best parts of a snickerdoodle and add some zing. It’s a fun way to add a pop of flavor to your cookies… not to mention, just look at those colors!! Admittedly, I think that was my favorite part. JELLO SNICKERDOODLE COOKIES ARE PERFECT FOR EVENTS

Trying to color-coordinate treats with an event? Look no further! The colors you can create with this recipe are nearly endless and you’re sure to end up with just what you need. Without a ton of work! Simply choose your jello based on the colors you’re trying to create and you’ve got yourself a perfectly pretty cookie platter.

 

LET’S MAKE JELLO SNICKERDOODLE COOKIES

Jello Snickerdoodle Cookies

Prep time:  30 mins

Cook time:  15 mins

Total time:  45 mins

Serves: Approx 6 dozen

Classic Snickerdoodles with a springtime fruity twist.
Ingredients
  • 3 cups flour
  • ½ cup sugar
  • ½ cup brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • ½ tsp salt
  • 1 tsp baking soda
  • 1 cup (2 sticks) softened butter
  • ½ tsp cream of tartar
  • Flavored Gelatin (Jello) - I made 5 different colors/flavors. I used about 1.5 oz for every 8 oz of cookie dough, but I'll explain that more in a minute.

  • Cinnamon Sugar Topping:
  • ⅓ cup sugar
  • 3 tsp cinnamon
  • Adjust to taste if you prefer
Instructions
  1. Combine butter, sugars, salt, soda and cream of tartar in a large mixing bowl.
  2. Add eggs and vanilla. Mix well.
  3. Stir in flour and mix until well combined and dough forms.
  4. Separate the dough into equal balls. This is were I got a little complicated. I made 5 colors and each ball of dough ended up being just barely over 8 oz. Yes, I measured it out on my kitchen scale. You don't have to be as precise, but it will make your flavors more consistent in strength as well as keeping each flavor close to the same number of cookies if you do measure it out. For each 8 oz ball of dough I ended up using 1.5 oz of gelatin powder. You could easily use 1 oz and the flavor would still be strong enough (although the color probably wouldn't be as bright).
  5. Mix the gelatin in to each ball. I just put the dough back in my KitchenAid and mixed it until the gelatin powder was combined with the dough. Then I kneaded the dough by hand to get the color mixed evenly. It didn't take much kneading.
  6. Roll dough into 1 inch balls and roll the tops in cinnamon sugar topping. Place on an ungreased cookie sheet.
  7. Preheat oven to 300F and bake for 12-15 mins. Mine were perfect at 13 mins.
  8. Remove from oven and cool 2-4 minutes before moving to a cooling rack to cool completely.

Store in an airtight container.  Yields approximately 6 dozen cookies (I got about 15 cookies of each color, just FYI.)
