* I suggest checking the bulk section, if your grocery store has one.  You can get things in the quantity that you need and it’s usually cheaper than the pre-packaged items.  And that way you can leave out what you don’t like and put in what you do.

SWEET & SALTY HALLOWEEN SNACK MIX DIRECTIONS

– Mix all ingredients together in a large bowl. Divide into serving sizes, if desired. Serve.

Seriously. How easy was that?! What I love about this mix is that it’s a great combo of salty and sweet, as well as crunchy and soft. Yum. There’s something to make everyone happy.

  • Chocolate? Check.
  • Gummies? Check.
  • Soft marshmallows? Check.
  • Crunchy chips? Check.
  • Peanut butter? Check.

Pick and choose your favorites. Make it the way you like it. If you’ve been around here much, you know I love being able to customize things so they fit our family.

Another great perk: this was a great project to do with my boys. What little kid doesn’t love a quick and easy project they get to eat afterward? Okay, admittedly, I like that too. Projects you can eat are the best kind of projects!

Package up this fun Halloween snack mix in little ziptop bags and put a Monster Mash Baggie topper on it for an extra festive spooky gift!

Salted Caramel Sugar Cookies

We were standing around the kitchen late one night after Mr Napping and I had been at (different) meetings all evening when Mr Napping said to me, “Are you going to the baptism on Saturday?”  “Which one?” I replied.  After about five minutes, he got to what he really was telling me, “I’m supposed to take cookies.”  Aha!  “I’ll just take that package of mint cookies in the cupboard,” he quickly added.  Uh, no.  Those are MY mint cookies, thank you very much.  And you just don’t take a package of cookies to a baptism.

SALTED CARAMEL SUGAR COOKIES

Cookies-
Ingredients:
– 4 eggs
– 1 Tbsp Vanilla Extract (or other extract – orange, lemon, almond)
– 1/2 cup Sour Cream
– 1 cup Shortening
– 1 1/2 cups Sugar
– 1/2 tsp Salt
– 1 tsp Baking Soda
– 4 1/2 cups Flour
Directions:
– Preheat oven to 350F.
– Mix eggs, vanilla, sour cream and shortening in a large bowl.
– Add sugar, salt, and soda.  Mix.
– Add flour and mix until well combined and dough is formed.
– Roll dough into 1 inch balls and place two inches apart on a lightly greased cookie sheet.
– Bake in preheated oven for 8-10 minutes, until cookies no longer appear wet.
– Let cookies cool for 1-2 minutes and then remove and place on cooling racks.
– Top with cream cheese frosting recipe below.

Frosting-
Ingredients:

– 4 ounces Cream Cheese, softened
– 1 1/2 cup Powdered Sugar
– 1/4 cup Butter, softened
– 1 1/2 teaspoons milk

– 2 Tablespoons (yes, TABLEspoons) Caramel Flavoring Extract (you can always start with less and add more if you want)
– Sea Salt for garnishing

Directions:
– Mix the cream cheese, sugar, butter and milk with an electric mixer until all ingredients are well combined.
– Add flavoring (a teaspoon at a time, if you wish) and mix until it’s well combined.
– Frost cookies and garnish with a pinch or two of sea salt on each cookie.

Yields approximately 4 dozen cookies.

Chocolate Peanut Butter Oatmeal Cookies

Here we are in the middle of Oatmeal Cookie Week.  I’ve been on a little kick lately with the oatmeal cookie.  I’ve been telling myself that because it’s oatmeal cookies, they’re healthy.  Ha.  Just let me live in my little delusion a while longer… there’s still cookies in the cookie jar.

Who doesn’t love a chocolate and peanut butter combo?  I had to try this combo out before I called it quits on my oatmeal cookie obsession.  These were good.  They were a bit rich too.  I couldn’t binge on these quite like I did on the Cranberry and Almond ones.  Still yummy though.

CHOCOLATE PEANUT BUTTER OATMEAL COOKIES

Ingredients:

– 1 cup sugar
– 1 cup brown sugar
– 2 cups flour
– 1 cup butter
– 2 eggs
– 1 tsp baking soda

– 1 tsp salt

– 1/2 Tbsp vanilla
– 3 cups oats
– 1/2 cup milk
– 3/4 to 1 cup peanut butter
– 6 Tbsp cocoa

Directions:
– Combine the sugar, brown sugar, flour, baking soda, salt and cocoa in a large mixing bowl.  Mix until well combined.
– Add in the butter, eggs, vanilla and milk.  Combine.
– Fold in the oats until thoroughly mixed.
– Add the peanut butter.  Mix into batter.
– Drop 1 inch balls onto lightly greased cookie sheet.
– Bake at 350F for 12 minutes.
– Cool on a cooling rack.
– Store in an airtight container.

Cranberry Almond Oatmeal Cookies

And welcome to Day 2 of this unofficial Oatmeal Cookie Week.  I have to admit this version was my favorite.  And actually what inspired my oatmeal cookies kick.  I found a pin on pinterest for lactation cookies and, up until then, I hadn’t known they existed.  I was intrigued and, on further inspection, I decided I needed to try this out for myself.  Whether or not they increased my milk supply or not, I can’t say for certain.  But they tasted awesome (next time, I’d put in some white chocolate chips too)!

CRANBERRY ALMOND OATMEAL COOKIES

Ingredients:
– 1 cup sugar
– 3/4 cup brown sugar
– 2 cups flour
– 1 cup butter
– 2 eggs
– 1 tsp baking soda

– 1 tsp salt
– 1 tsp cinnamon

– 1/2 Tbsp vanilla
– 3 cups oats
– 1 cup chocolate chips
– 2 cups craisins (dried cranberries)

Directions:
– Combine the sugar, brown sugar, flour, baking soda, salt and cinnamon in a large mixing bowl.  Mix until well combined.
– Add in the butter, vanilla and eggs.  Combine.
– Fold in the oats until thoroughly mixed.
– Add chocolate chips.  Mix into batter.
– Drop 1 inch balls onto lightly greased cookie sheet.
– Bake at 350F for 12 minutes.
– Cool on a cooling rack.
– Store in an airtight container.

Chocolate Oatmeal Raisin Cookies

Welcome to Day 1 of my unofficial oatmeal cookie week. Because… cookies for a whole week? Yes, please.

Oatmeal cookies just shout “AUTUMN” to me… I don’t really know why. Oatmeal is also a lactation-boost; so, there’s that going for me too. I figured it was a win-win. That’s right, all those cookies I’m inhaling are for the baby. That’s my story and I’m sticking to it. Don’t worry, they are still delicious, even if you don’t make more milk.

I took the classic oatmeal raisin cookie and added a bit of chocolate… That’s right.  Yum.

CHOCOLATE OATMEAL RAISIN COOKIES

These cookies are soft and the chocolate will satisfy your next craving. The oatmeal and raisins are healthy, so I won’t judge if you eat two or three at once. I just ask that you do me the same courtesy. These whip up pretty quickly and even my kids and husband, who aren’t big fans of oatmeal at all, still really enjoy these. If you use regular oats, definitely let them sit in the milk while you mix up everything else. If you use instant oats, that step isn’t as crucial, but I still like to let them soften a little. What are you waiting for!? Mix up some cookies!
